Brrrrr! Winter is here, and it seems we’re in for a long, cold one.  I hope your Holidays were joyful and memorable.  The Hamptons were stunning and cheerful with all the lights, trees, and festivities bringing the Holiday Spirit to life.  Each village—Southampton, Sag Harbor, Bridgehampton, and East Hampton—decorated and celebrated in its own unique way, showcasing their own charm and warmth.  Interestingly, Christmas and the first day of Hanukkah fell on the same day this year, a rare occurrence that has only happened five times since 1900: in1910, 1921, 1959, 2005, and 2024.  The Golden Pear Cafes were bustling, and our catering business was brisk and plentiful.  Now that January is here, things have quieted down.  We’re closing a little earlier, and it’s time to plan for an exciting, busy season.

Anne and I cherished our new granddaughter’s first Christmas!  Baby Madison was undoubtedly the star of the Holiday Season, and we enjoyed every moment with her.  She received plenty of gifts from “Nanny” and “Poppa”, as well as her aunts and uncle.  Of course, she received many adorable new outfits!  This blessing in our lives is more than we could have ever imagined 

This week, I made two incredibly delicious dinner entrees that are perfect for the cold nights we are all enduring: Smash Burgers and Pan Roasted Chicken Thighs.  I prepare both in a black, cast-iron pan, which retains the perfect amount of heat for proper cooking temperature and the results I desire—crispy, charred burgers, smothered in onions, jalapenos, and cheese, and golden-brown chicken thighs, with meat that falls-off-the-bone.  I will include both recipes for you so you can try them at home.  I’m certain you will enjoy them.  Bon Appetit!
